Spiced Apple, Maca + Blackberry Overnight Oats

I made this delicious breakfast a few weeks ago, when the weather was starting to turn and so making me crave anything with the warming spice of cinnamon and nutmeg. If you use Pinterest you've no doubt noticed that come November everybody will pumpkin spice the life out of anything they can get their cold little hands on - brownies, smoothies, body scrubs, chutney, cocktails, tea! I'm definitely not complaining, I absolutely love the flavours and I would eat a pumpkin pie every week if I could, but I wanted to make something different that was a bit lighter and more fresh. 
I think the tangy sweetness of apple goes so well with the caramel flavour of energy-boosting maca powder and the spicy warmth of cinnamon and nutmeg here, both of which match perfectly with the unbeatable creaminess of overnight oats. If you've not tried making these for brekky yet, they are a complete winner. When they started appearing all over Instagram and food blogs I thought "cold, raw oats floating round in a bit of milk...I'll pass thanks" but I was totally wrong. The oats and chia seeds really soak up all the milk and yoghurt, which you can flavour with whatever you fancy, making the most perfect creamy texture and a filling breakfast that will keep you going all morning. Essentially the same benefits of porridge, except you don't need to stand over the hob for 15 minutes every morning, stirring with one hand whilst doing your make up for work with the other - just mix up the night before then grab and go in the morning. Ideal.    
This seemingly small and simple breakfast is full of protein, fibre and antioxidants from those magical little chia seeds and has huge energy boosting power from the maca. 

Serves 1
1/2 cup oats
1/2 cup natural yogurt 1/2 cup nut milk or regualr milk
1/2 cox apple
1 teaspoon cinnamon
1/2 teaspoon fresh grated nutmeg
1 tablespoon maple syrup or honey
2 tablespoon chia seeds
1 teaspoon maca powder

1. Mix together oats, chia seeds, milk, yoghurt, spices and maple syrup. Leave overnight in the fridge. 
2. Mix through grated apple and maca powder. 
3. Top with blackberries and pumpkin seeds.
